Lettuce Cups:

2 chicken boneless breasts, cooked and cubed

3/4 cup shredded purple cabbage

3/4 cup shitake mushrooms, sliced

1/4 cup green onions, sliced

1 head of butter lettuce, separated, washed and dry

Sprinkle of black and white sesame seeds

Drizzle of sesame ginger dressing

Optional: Add mandarin oranges and/or rice noodles

Sesame Ginger Dressing:

1/2 cup toasted sesame oil

2 tablespoons almond butter or tahini

1/2 cup coconut aminos

1/2" fresh ginger

Blend all ingredients in a blender or food processor until smooth.
