• 1 cup dry roasted and unsalted macadamia nuts
  • 2 tablespoons Italian herbs (fresh or dried)
  • 1 teaspoon sea salt
  • 4 pastured boneless chicken breasts


  • Preheat oven to 375 degrees.
  • In a mini chopper or blender place macadamia nuts and pulse until fine and crumbly.  Careful not to over do as it will turn into butter.  Place into a bowl and add Italian herbs, salt and pepper.
  • Wash and chicken breasts and place in a roasting pan.  Using your hands, place a layer of macadamia mixture on top of breast until covered.  Place in the oven and cook for 40-50 minutes.  If the top is not as brown as desired, broil for a few minutes.

Optional: Serve with sautéed spinach and garlic.
