• 3 tablespoons fresh lemon juice
  • 2 tablespoons minced garlic
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup olive or avocado oil
  • 8 boneless breast of chicken
  • For garnish, lemon wedges, rosemary sprigs or Italian parsley


  • Place all ingredients in a bag or storage container and let the chicken marinate for 2-24 hours.
  • Preheat grill on medium heat and cook chicken until cooked through but still moist (approximately 10 minutes on each side).  Use extra marinade on chicken while cooking.
  • Garnish with lemon wedges, rosemary sprigs or Italian parsley.

Serves 8

Optional: Can use marinade for vegetables as well.
