2 lbs. boneless chicken breast

1 tablespoon olive oil

1 cup mild salsa verde

1/2 cup fresh lime juice

1 1/2 teaspoons chili powder

1 1/2 teaspoons sea salt

1 teaspoon onion powder (omit for Low FODMAP)

1 teaspoon garlic powder (omit for Low FODMAP)

1/2 teaspoon smoked paprika

1/2 teaspoon cumin

1/4 teaspoon black pepper

Optional: can use hot sauce if you like it spicier


Rub chicken with olive oil and place at the bottom of your slow cooker.  Add remaining ingredients.  Cook on high for 2-4 hour or low for 6-7 hours until chicken is tender enough to shred.
