ingredients:

  • 1 tablespoon coconut oil
  • 1 white onion, chopped
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 2 teaspoons turmeric, fresh or ground
  • 2 teaspoons garam masala
  • 1 teaspoon coriander, dried
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 pinch cloves
  • 1/2 teaspoon sea salt
  • 2 tablespoons tomato paste
  • 1 (14oz) can coconut milk
  • 1 cup chicken bone broth
  • 1 pound boneless and skinless chicken breast, cut into pieces
  • 2 tablespoons arrowroot powder
  • 1/2 cup fresh cilantro, chopped
  • Serve with cauliflower rice; Serves 4

instructions:

  • Place the chicken in the crock of your slow cooker
  • In a large pan, heat coconut oil over medium heat. Add onion and cook 5-7 minutes, or until translucent.  Add ginger, garlic, turmeric, garam masala, coriander, cumin, chili powder, cloves and sea salt. Cook 1-2 minutes more, or until very fragrant.
  • Stir in tomato paste, coconut milk, and chicken bone broth and stir to combine.  Add chicken and cover pan.  Simmer for 30 minutes while stirring occasionally.
  • For a thicker sauce, mix arrowroot with about 1 tablespoon water and add to pan.  Add in cilantro right before serving.
