• 3 large parsnips, peeled and trimmed
  • 3/4 cup coconut cream (hard cream from the top of coconut milk or buy coconut cream)
  • Sea salt to taste
  • Garnish with parsley


  • Cut parsnips into chunks and steam for 10 minutes or until fully soft.  
  • Place parsnips in a food processor (or good blender) and add the coconut cream and a couple pinches of sea salt.  Whip for about a minute until smooth.  
  • Add more salt if needed and garnish with parsley.

Optional: Can add 2 raw or roasted garlic cloves.
