ingredients:

Salad:

  • 6-8 cups or handfuls organic spring lettuce
  • 12 oz (1 large can) white albacore tuna in water (drained)
  • 6-8 radishes, julienned or sliced thinly
  • 1/4 red onion, sliced thinly
  • 1/2 cup fennel, sliced thinly
  • 1/2 cup purple cabbage, sliced thinly
  • 1/3 cup kalamata olives
  • 1/3 cup alfalfa sprouts
  • Optional: can add walnuts if not AIP

Dressing:

  • 1/4 cup avocado oil
  • 1/8 cup apple cider vinegar
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • Sea salt and pepper to taste

instructions:

  • Mix all salad ingredients into a large salad bowl.  
  • Place all dressing ingredients into a blender or mini chopper and blend until smooth. Dress the salad and serve.
