Tuna Salad

ingredients:
Salad:
- 6-8 cups or handfuls organic spring lettuce
- 12 oz (1 large can) white albacore tuna in water (drained)
- 6-8 radishes, julienned or sliced thinly
- 1/4 red onion, sliced thinly
- 1/2 cup fennel, sliced thinly
- 1/2 cup purple cabbage, sliced thinly
- 1/3 cup kalamata olives
- 1/3 cup alfalfa sprouts
- Optional: can add walnuts if not AIP
Dressing:
- 1/4 cup avocado oil
- 1/8 cup apple cider vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon lemon juice
- Sea salt and pepper to taste
instructions:
- Mix all salad ingredients into a large salad bowl.
- Place all dressing ingredients into a blender or mini chopper and blend until smooth. Dress the salad and serve.
Serves 4-6
