• ½ large sweet potato

For Mashed Avocado:

  • 1 ripe avocado, mashed
  • Sea salt

For Sautéed Spinach:

  • 1/2 tablespoon ghee or coconut oil
  • 1-2 garlic cloves, minced
  • 2-4 handfuls of organic spinach

For Sautéed Mushrooms:

  • 1/2 tablespoon ghee or coconut oil
  • 1-2 cups slices mushrooms of your choice
  • 1 teaspoon fresh rosemary, chopped


  • Preheat oven or toaster oven at 375 degrees.  Wash the sweet potato while leaving skin on.  Slice lengthwise into ¼“thick slices.
  • Bake slices in oven or toaster oven for 20-25 minutes or until soft and starting to brown.  Top with your choice of toppings.
