Roasted Artichoke Hearts

  • 6 cups frozen artichoke hearts (2-12 ounce bags)
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 3/4 tsp black pepper (coarsely ground)
  • Juice of 1 lime (freshly squeezed)


  • Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  • Empty bag of frozen artichoke hearts into a bowl and drizzle olive oil and lemon juice, Celtic sea salt and pepper. Mix until all hearts are covered.
  • Arrange seasoned artichoke hearts in a single layer on the baking sheet and bake for 25-35 minutes, stirring several times during baking, until lightly brown. Broil for 1-2 minutes at the end if you like them a bit more crispy. Remove from oven and serve.

Goes great with cilantro dipping sauce, lemon tahini dressing or guacamole
