1 large sweet potato (or 2 small), cleaned with skin on

4 large eggs

1/4 cup monk fruit maple syrup (or regular maple syrup, not for Detox)

1/2 teaspoon baking soda

1/2 cup coconut flour

1/2 cup monk fruit granules

2 teaspoon pumpkin pie spice

1/2 teaspoon sea salt

1/3 cup coconut oil


Preheat oven to 350F.

Mince 1 raw large sweet potato in a food processor until it becomes a rice consistency.

Add remaining ingredients to food processor and blend until smooth.

Bake in a parchment lined standard bread pan (4 1/2" by 8 1/2") for about 90 minutes until a toothpick when inserted comes out clean.
