Pesto Cauliflower Rice

- 2 pounds (32 ounces) organic cauliflower rice raw
- 1 tablespoon coconut oil
- 1/2 cup white onion, diced
- 10 mini zucchinis (or 2 regular sized), sliced into 1/4" circles
- 3/4 cup pesto
- sea salt to taste
- In a large pan, melt coconut oil and add onion and zucchini. Stirring frequently for 2-3 minutes.
- Add cauliflower rice and stir until cooked.
- Add pesto and sea salt and serve.
