2-3 pounds of parsnips, cleaned and trimmed
Olive oil (approximately 2 tablespoons)
Sea salt and black pepper to taste
Optional: rosemary and garlic (omit garlic for Low FODMAP)
Preheat oven to 450 degrees. Line a baking sheet with parchment and put aside.
Cut parsnips lengthwise into quarters so that all pieces are roughly the same size. Place in a bowl and drizzle olive oil just enough to coat then fries. Add sea salt and black pepper and other seasoning if desired. Mix to distribute all seasoning evenly and place fries on baking sheet in one layer. Roast until tender and golden brown, 25 to 30 minutes, and tossing parsnips halfway through baking time to ensure all sides are evenly cooked.
