Mini Quiche

ingredients:

  • 6 eggs
  • 1/4 cup cherry tomatoes, diced
  • 1/4 yellow or white onion, diced
  • 3 chicken sausages, cut in small pieces
  • 1/2 cup spinach
  • 1 ½ teaspoon coconut oil
  • Olive oil spray
  • Sea salt and pepper to taste

instructions:

  • Preheat oven to 400 degrees F.  Using a regular sized muffin tin pan, grease muffin cups with olive oil spray.
  • Heat coconut oil on medium/low heat and add tomatoes, onions, spinach and sausages. Stirring frequently cook about 5 minutes or until spinach is limp and onions are translucent.
  • In a separate bowl, whisk together eggs, sea salt and a little pepper.  Add contents of veggies and sausages to eggs and fill muffin cups ¾ full.  Sprinkle a little black pepper over top and place in the oven.  Cook for 10-15 minutes or until the center is firm.   Cool in pan 1-2 minutes before transferring.

Makes 7 mini quiches

Optional: Can use bacon instead of sausages.  Can change up veggies and add herbs.
