- Preheat oven to 350 degrees
- Wash yams and discard ends if needed. With great precision, cut yams with small and even slices (about 1/8") almost all the way but be carful not to cut through completely so the bottom is still in one piece.
- Place yams in a small dish so they fit without much extra room. In a pan, melt 2 tablespoons of ghee and add garlic. Stir until slightly sauteed. Brush or pour ghee and garlic evenly on yams and try to get some in between the slices.
- Place in oven uncovered and bake for 40 minutes then add the remaining tablespoon of ghee. Cook for another 20 minutes or so until the yam starts to brown. Place parsley on top and serve.
Optional: Can use larger yams or more small ones.
