• 6 tablespoons of coconut oil or ghee
  • 4 organic yellow onions, thinly sliced
  • 1 tablespoon or raw local honey|
  • 3 garlic cloves, pressed or minced
  • 1/4 cup apple cider vinegar
  • 7 cups vegetable, chicken, or beef bone broth
  • 1 tablespoon sea salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon fresh thyme
  • 2 bay leaves


1. Heat oil in a large pot over medium-high heat and add onions and stir in until translucent.

2. Add honey and reduce heat to medium and cook for 10 minutes.

3. Add garlic, apple cider vinegar, bone broth, sea salt, black pepper, thyme, and bay leaves and cook on low for 1-2 hours.

4. Remove bay leaves and use handheld/immersion blender to puree until smooth. Add more sea salt and pepper if needed and serve.

Garnish with thyme sprig and/or caramelized onions.
