Cinnamon Cookies

  • 1 cup tiger flour
  • 3/4 cup arrowroot flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup palm shortening
  • 1/4 cup maple syrup or monk fruit maple syrup
  • 1 tablespoon RGN collagen protein, vanilla
  • 1/2-3/4 cup carob chips


  • Preheat oven to 350 degrees.  In a large bowl, mix together tigernut flour, arrowroot flour, baking soda, sea salt, and cinnamon.  In a small pot, melt the shortening and add maple syrup.  Mix fully and add collagen and continue to combine well until there are no clumps.  Pour liquids over the dry ingredients and mix well until it become a dough.
  • With your hands, roll batter into a small ball and place on parchment covered cookie sheet while flattening it slightly.  If using carob chips, place some chips on top and press gently into cookie.  Repeat until batter is gone.  Place in the oven and cook for 12 minutes.

Makes 12-13 cookies
