ingredients:

20 shrimp, cleaned and trimmed

1 tablespoon avocado oil

Juice of 2 limes

2 garlic cloves, minced

2 teaspoons fresh minced ginger

Sea salt and pepper to taste

1/4 cup cilantro, chopped and a bit more for garnish

instructions:

Marinate shrimp in avocado oil with all other ingredients for 1 hour or up to overnight.  You can place shrimp on kabob skewers and place on the grill or can cook on the stove without skewers.  Cook until done and garnish with fresh cilantro.  Can be served with cauliflower rice.

Tip: If using wooden skewers, let them soak in water for 30-60 min before placing shrimp on to avoid burning.
