• 2 cups full fat coconut milk
  • 1 1/2 cups organic frozen cherries
  • 1 tablespoon monk fruit (or stevia) crystals
  • 1/2 cup organic chia seeds
  • Unsweetened coconut shreds for garnish


  • In a blender, mix coconut milk, cherries, and monk fruit.  Blend until smooth. Remove from blender and stir in chia seeds by hand.
  • Place into individual ramekins or mason jars and refrigerate for 4-24 hours.  Garnish with coconut shreds and serve.
