Cherry Chia Pudding

- 2 cups full fat coconut milk
- 1 1/2 cups organic frozen cherries
- 1 tablespoon monk fruit (or stevia) crystals
- 1/2 cup organic chia seeds
- Unsweetened coconut shreds for garnish
- In a blender, mix coconut milk, cherries, and monk fruit. Blend until smooth. Remove from blender and stir in chia seeds by hand.
- Place into individual ramekins or mason jars and refrigerate for 4-24 hours. Garnish with coconut shreds and serve.
