Chai Spiced Carrot and Millet Salad

ingredients:

  • 1 pound carrots (approx. 6 large carrots), peeled
  • 1 cup slice red onion, sliced
  • 1 ½ tablespoon olive oil
  • 4 teaspoons chai spice (I use Countertop Chai)
  • 3/4 cup uncooked millet
  • 1/2 cup roasted pistachios (shelled) or sliced almonds
  • 1/2 cup pomegranate seeds
  • 1/2 cup flat leaf parsley, minced
  • 1/4 tablespoon fresh mint leaves, minced
  • Juice from 1 lemon
  • 2 tablespoons olive oil
  • Celtic sea salt and pepper to taste
