Cauliflower Rice with Veggies
ingredients:
- 1 head of raw cauliflower
- 1-2 tablespoons of coconut oil
- 1/2 cup diced onions (yellow or white)
- 1 cup of kale or spinach
- 2 cups of asparagus cut into 1” pieces
- 1/2 tomato skins (removing the seeds and liquid)
- Sea salt and pepper to taste
instructions:
- Remove the greens from a raw cauliflower head and cut into pieces/segments small enough to fit in the food processor
- Place the cauliflower pieces into a food processor until all the cauliflower is minced into pebble like pieces. This could take a few spins and the need to adjust the cauliflower,
- In a pan, heat up the coconut oil and cook the onions slightly then add the cauliflower.
- Add all the vegetables and stir until cooked approximately 5-7 minutes
Optional:
- 1 pat of grass fed or clarified butter in addition to the coconut oil
- 3/4 cup cooked black lentils (or black beans)
- Can add or replace any vegetable to your liking
