Baked Herb and Pistachio Falafel with Cashew Dressing

ingredients:

  • 8 sprigs of fresh mint
  • 8 sprigs of parsley
  • 2 cups pistachio nuts
  • 2 cups of garbanzo beans (chickpeas) rinsed and strained
  • 2 cloves garlic
  • 1/2 small white or yellow onion
  • 3 tsp olive oil
  • 1 tsp cumin
  • 1 tsp garbanzo or other gluten free flour
  • 1 tsp baking powder

Cashew Dressing:

  • 6 tbsp cashew butter
  • 6 tbsp grapeseed oil
  • 3 tbsp lemon juice
  • sea salt

instructions:

  • Preheat oven to 375
  • Blend the herbs in a mixer for about 30 seconds.
  • Add pistachios and pulse until combined
  • Add the rest of the ingredients and blend for about a minute - the texture should be rough.
  • Make 24 small round balls using your hands or a spoon
  • Place them on a baking sheet covered in parchment paper
  • Bake for 15 minutes, turning every 5 minutes to get an even browning.
  • Remove falafel and let cool

Cashew Dressing:

  • Whisk the grapeseed oil, lemon juice and salt together
  • Slowly add the oil until combined
  • Dip or pour Cashew Nut or Tahini Dressing over Falafel
  • Serve with cucumbers and tomatoes in a lettuce or cabbage cup.
