ingredients:

For Salad:

  • 2 large heads of red leaf lettuce, chopped
  • 2 cups of red cabbage, chopped
  • 2-3 green onions, chopped
  • 1 red pepper, diced
  • 1 yellow or orange pepper, diced
  • Handful of Chinese snow peas, julienned
  • 2 pickling cucumbers, sliced
  • 1-2 small cans of mandarin oranges, rinsed and drained
  • 1/2 cup roasted cashews or slivered almonds
  • Black and white sesame seeds
  • Can add chicken or shrimp

For Dressing:

  • 3/4 cup fresh lemon juice
  • 3/4 cup seasoned rice vinegar
  • 2 1/2 tablespoons honey
  • dash pepper
  • 3 to 4 drops coconut aminos
  • 2 tablespoons sesame oil
  • 2 tablespoons olive oil

instructions:

  • In a medium mixing bowl, add lemon juice, rice vinegar, honey, pepper, and coconut aminos.
  • Whisk in sesame oil and olive oil to emulsify. Toss desired amount of dressing into salad and enjoy!
