Almond Dessert Bars

ingredients:

Crust:

  • 1 cup roasted almonds
  • 3/4 cup Medjool dates
  • Pinch of sea salt

Filling:

  • 1 1/2 cups blanched almond flour
  • 1/3 cup monk fruit maple syrup (Lakanto Brand)
  • Slightly less than 1/2 cup coconut oil, melted
  • 1/4 cup coconut milk, full fat and unsweetened
  • 2 1/2 teaspoons almond extract
  • Pinch of sea salt

instructions:

Crust:

  • Place parchment paper in a 9" x 9" pan so bottom and all sides are covered.
  • Pulse together all ingredients in a food processor until sticky crumbles form.  
  • Press dough into the pan. Set aside.

Filling:

  • Place all ingredients in a food processor and blend until completely smooth.
  • Scrape down the sides.  
  • Taste and adjust for sweetness and almond flavor.  
  • Pour filling over crust and smooth evenly with a spatula.Freeze until firm, about 3 hours.  
  • Remove from pan and cut into squares.  

Store in the refrigerator
