• 2 tablespoons ghee or coconut oil
  • 1 medium yam, washed with skin and cubed
  • 1/2 cup red or yellow onion, diced
  • 1/2 cup button mushrooms, quartered
  • 3 chicken sausages, sliced into rounds
  • 1 handful red kale, washed and removed from stem into pieces
  • 1 handful spinach
  • 1 teaspoon chopped rosemary
  • 1 teaspoon thyme
  • Sea salt and pepper to taste


  • In an iron skillet melt ghee or coconut oil and add cubed yam.  
  • Stirring regularly until soft and slightly brown.  Add sausages, mushrooms and onions and continue to stir.  
  • Add kale and spinach and herbs and cook until greens are wilted.
  • Serve with or without a fried egg on top.
