ingredients:
- 2 tablespoons ghee or coconut oil
- 1 medium yam, washed with skin and cubed
- 1/2 cup red or yellow onion, diced
- 1/2 cup button mushrooms, quartered
- 3 chicken sausages, sliced into rounds
- 1 handful red kale, washed and removed from stem into pieces
- 1 handful spinach
- 1 teaspoon chopped rosemary
- 1 teaspoon thyme
- Sea salt and pepper to taste
instructions:
- In an iron skillet melt ghee or coconut oil and add cubed yam.
- Stirring regularly until soft and slightly brown. Add sausages, mushrooms and onions and continue to stir.
- Add kale and spinach and herbs and cook until greens are wilted.
- Serve with or without a fried egg on top.
