ingredients:
2 tablespoons ghee or coconut oil
1 medium yam, washed with skin and cubed
1/2 cup red or yellow onion, diced
1/2 cup button mushrooms, quartered
3 chicken sausages, sliced into rounds
1 handful red kale, washed and removed from stem into pieces
1 handful spinach
1 teaspoon chopped rosemary
1 teaspoon thyme
Sea salt and pepper to taste
instructions:
In an iron skillet melt ghee or coconut oil and add cubed yam.
Stirring regularly until soft and slightly brown. Add sausages, mushrooms and onions and continue to stir.
Add kale and spinach and herbs and cook until greens are wilted.
Serve with or without a fried egg on top.
