  • 2 Organic ripe bananas
  • 4 Eggs
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • Coconut oil or ghee
  • Berries or unsweetened coconut flakes for garnish


  • In a blender or food processor, blend all ingredients together until smooth.
  • In a large skillet on medium heat, melt coconut oil or ghee and place pancake mixture in circles without touching.
  • Cook 3-5 minutes, or until bubbles form on the surface.
  • Flip pancakes and cook another 1-2 minutes or until cooked through.
  • Repeat with remaining batter.
