Thai Salad with Sesame Ginger Dressing

  • 4-6 cups greens (I use red leaf lettuce)
  • 1 cup carrots, shredded
  • 1 cup purple cabbage, shredded
  • 1 cup napa cabbage, shredded
  • 1 cup cucumber, diced or julienned
  • 1 cup cilantro, chopped
  • Sprinkle of black and white sesame seeds

Optional: 1/2 cup cashews or organic peanuts, roasted

Sesame Ginger Dressing:

  • 1/2 cup sesame oil
  • 2 tablespoons almond or organic peanut butter
  • 1/2 up coconut aminos
  • 1/2" fresh ginger


For Salad:

  • Place all salad ingredients into a bowl and mix with dressing.
  • Can add shredded chicken or shrimp

For Sesame Ginger Dressing:

  • Place all ingredients into a food processor or blender and blend until smooth.
